An ace evening was had as we served up our Vietnamese cuisine to members of Saltdean tennis club last week at Whitecliffs in Saltdean. It was smashing to hear so many compliments on our food. Vietnamese curry eventually run out as the winner, as the most popular dish - this was served with noodle, which is how it is served in Vietnam. The lightly spiced curry compliments the noodles, even better than rice, although we do have this option on our home delivery. It is the only compromise we make on producing truly authentic dishes.
I was reminded of this when I was beaten soundly to love when discussing ideas for our business. I noticed that many Vietnamese restaurants have the option of rice instead of noodles, hybrid dishes and certain signature dishes coming with chicken options; something you would never see in Vietnam.
I merely hinted this could be something we looked into - this turned out to be clearly a double fault as the response was a volley of reprimands and reasons why this wouldn't happen. After the air had cleared from being turned blue, the reasons why there would be no such compromise of our dishes were thus:
People often comment on our dishes being authentic. That's because that is what they are authentic. They are Vietnamese recipes, cooking methods that have been crafted over years, developed with certain flavours to combine with each other.. For example take our noodle salad dishes, the flavours are designed to compliment the noodles. If the same ingredients are served with rice the texture and taste change.
I was soundly beaten to love - the love of real Vietnamese food and flavours. It was a happy reminder of why we started this business and our unique angle to provide true authentic Vietnamese cuisine.
Why were we having this conversation to begin with? We are aware that a lot of dishes contain red meat - because that is what is used in authentic Vietnamese dishes. However, we are aware that a lot of people want to avoid this, We have a number of vegetable noodle soups and vegetarian dishes, We were also looking at authentic dishes involving chicken. Yen makes a great chicken pho which we will soon make available on home delivery. Other dishes without red meat are also going to be forthcoming. You can be sure that they will definitely be authentic and tasty.
